Free Choc and Nut Cookie Recipe


As promised.... see below for a fool proof quick cookie recipe...
I hope you enjoy it, this always goes well down with my household.
experiment yourself by adding different goodies such as white chocolate chips or even a little peanut butter

Simple Chocolate Chip Cookie Recipe

130g plain flour
70 g butter (softened)
1 egg
50 g soft brown sugar (Demerara)
50 g superfine / caster sugar
110 g chocolate chips (white, milk or dark…you choose)
50 g chopped hazelnuts or pecan nuts
½ teaspoon bicarbonate of soda
1 teaspoon vanilla extract

* Optional: 50 g chopped pecan or hazelnuts


Step By Step

1.) Pre- heat your oven to 180°C

2.) Grease two baking trays with butter

3.) Add the brown sugar, caster sugar, plain flour, bicarbonate of soda, butter and vanilla extract to a bowl and mix them well using a wooden spoon. Add the egg, chocolate and nuts and mix all the ingredients together (it is much more fun doing it by hand, especially if you are making these with children BUT you can use a blender if you wish, it will take about 2 mins to mix it up)

4.) Once your mixture is ready, use 2 spoons to scoop little dollops onto your greased trays, each dollop should measure about 4.5cm in diameter, but don’t be tempted to pat the mixture down as this will give you a lovely chewy consistency if left like little cookie dough mountains. You need to leave a good gap between the dollops or you will end up with the cookies joining up to create a cookie tray.

5.) Place your oven trays in the centre of a pre heated oven and cook at 180°C (gas mark 4) for 12 mins
(Some ovens may vary, you should check on your cookies at 10 mins, they should be lightly golden and have a good spring the centre when pressed with the back of the spoon)

6.) Once your cookies are ready leave them aside for 5 mins, you should then be able to take them off the tray using a fish slice, transfer the cookies to a cooling rack to cool down even further.
