Free Knitted Flower Pattern
All i ask is that if you use this free pattern is... please re-tweet this post ro send it to at least one crafty friend, please help me to promote my blog.
You will need:
1 x Set of 7.5mm Knitting Needles
50grams of Yarn
Tapestry Needle
Ruler ot tape measure
Scissors
* Beads or buttons are optional extras if you choose to addorn your flower even further.. buttons and beads look great stitched to the centre of the flower
Using your 7.5mm Gauge Needles Cast on 40 Stitches
Pearl 1, Cast off 6, pearl 1, cast off 6, pearl 1, cast off 6, pearl1, cast off 6, pearl 1, cast off 6, pearl1 (You should have 10 stitches left on your needle)
Measure a length of wool that is attached to the ball of wool at 30-40cm and cut the yarn. Thread this end onto your tapestry needle and thread through the 10 stitches starting at the nearest stitch and pull tightly. As the thread pulls the flower will gather and you will be left with a beautifully formed daisy.
Treble stitch the end to ensure no unravelling.
You knitted flowers will make a beautiful embellishment to any scarf or knitted garment.

Cardmaking Gallery - Thank you to Susan Smith
This weeks treat..........
As promised....peanut butter cookie recipe
Ingredients
1/2 cup (120ml) of Chunky peanut butter
1/2 cup of granulated sugar
1/2 cup of brown sugar
1/2 cup of butter or margarine, melted
1 med/large free range or organic egg
1/2 teaspoon of vanilla extract (not essence)
1 1/4 (300ml) cup of plain flour
1/4 teaspoon of salt
3/4 teaspoon baking soda
Method
Start by preheating oven to 190C OR 375° F OR GAS MARK 5
Cream together sugars, melted butter, egg, and vanilla until creamy and smooth. If you're low on brown sugar, seek tip section below.
Combine flour, peanut butter, salt, and baking soda in the mixture from step 2.
After mixture is complete, flatten small pieces into cookie shapes with a fork and place on ungreased oven tray at least 2.5 inches apart.
Bake in oven for 8-10 minutes, or until golden brown.
Enjoy!!!
Pull out of oven and allow to cool.

What i am working on this week
I have set myself a few challenges this week.
I am working on a Miami Dolphins and a Raiders insprired cardmaking design sheets. I will tweet when these are uploaded to CUP.
I am also nearly finished my Thanks Giving Turkey Designs sheet which will also be upladed to CUP this week.

Quick and Easy Thai Red Curry
Thai Red Chicken Curry Recipe
(serves 4 people or 2 hungry people)
Ingredients
3 large chicken fillets, diced
3 shallots, finely chopped (if you cant get shallots use 1 1/2 medium sweet onions)
3 garlic cloves, finely chopped or pressed if you have a gralic press
1 small red pepper, finely chopped (optional)
1 tablespoon sunflower oil or Bran oil if you would like a healthier option
3 tablespoons red Thai curry paste (from a jar)
2 teaspoons galangal paste (from a jar)
400ml / 14 fl oz coconut milk
1 tablespoon fish sauce
1 teaspoon muscovado sugar
3 dried kaffir lime leaves
Coriander leaves (optional - i personally dont like corriander but this is up to you )
1 medium hot red Chilli (optional - i like the heat!)
Method
1. Fry the garlic, shallots and red pepper in the sunflower oil, in a medium saucepan for 4 minutes or until soft. Add the Thai curry paste and galangal and cook for 1 minute.
2. Add the coconut milk, fish sauce, sugar and lime leaves to the saucepan and bring gently to the boil. Stir in the diced chicken fillet pieces, cover the saucepan and simmer gently for around 30 minutes or until the chicken is cooked through.
3. Great served with Basmati rice - and i buy supermarket Roti or Chapati (flat breads)
Top tips, if you cant get your galangal from your supermarket you will be able to get it from your local Indian supermarket.
Waitrose usually sell it but it is cheaper and a more authentic choice from my local Indian shop
kaffir lime leaves - if you are lucky enough you can get these fresh in your fresh fruit and veg markets these days and note these freeze superbly.
This dish is amazing for using any left veg you may have in teh fridge such as potatoe, cauliflower, brocolli

125g (4oz) granulated sugar
125ml (4 fl oz) lemon juice
60g (2 oz) caster sugar
Finely grated zest of 1 lemon
1/2 teaspoon pure vanilla extract please do not use vanilla essence, its not the same
2 medium egg whites (left out at room temperature)
Icing sugar for dusting (optional)
Small amount of lemon or lime zest for decoration (optional)
Method
1. Firstly preheat oven to 375F / 190C.
2. In a medium-sized saucepan combine the granulated sugar, lemon juice and zest and cook over a medium heat whilst stirring until all the sugar is dissolved. Reduce the heat once sugar has dissolved and simmer for 3 minutes. Remove from the heat and add the vanilla extract.
3. Using a large bowl, add the egg whites and beat them until soft peaks form when the whisk is lifted up. Gradually add the caster sugar and continue to beat the mixture until it is thick. Meanwhile, bring the lemon mixture back to a boil. While whisking add 60ml (2 fl oz) hot lemon mixture into the egg whites and beat until very light and fluffy. Will take around 5 minutes.
4. Divide the remaining lemon mixture among six ramekins (about 2 teaspoons per cup). Divide egg whites among the ramekins.
5. Place in the oven and bake until they just being to go slightly brown on top, this takes usually 5-7 minutes. Be very careful not to overcook or the souffles will shrink as they cool down.
6. Remove from the oven and dust lightly with icing sugar and serve.
